  • 4 large artichoke hearts
  • 1 stalk celery, peeled, cut into 2" by 3/32" sticks
  • ½ small head frisée lettuce
  • 1 small tomato, peeled, seeded, cored, shredded
  • minced, fresh chives
  • 1 large egg yolk
  • ½ tablespoons dijon-style mustar
  • fine salt and freshly ground pepper
  • ½ tablespoons white wine vinegar
  • 50 g french beans, trimmed
  • 100 g cauliflower florets
  • 200 ml sunflower or grapeseed oil
  • Recipe preparation steps

    Cook the artichoke hearts in salted, acidified water until tender, about 25 minutes. Drain well and refrigerate until needed.

    Blanch the beans in salted water until barely tender. Chill in an ice bath, drain, and set aside until needed.

    Blanch the celery in salted water briefly. Chill in an ice bath, drain, and set aside until needed.

    Blanch the cauliflower in salted water until not quite tender. Chill in an ice bath, drain, and set aside until needed.

    Prepare a mayonnaise from the large egg yolk, mustar, salt and pepper, vinegar and oil.

    To assemble the salad, place some frisée leaves on each serving plate. Place an artichoke heart in the center. Gently mix the beans, celery, cauliflower, and tomato with some of the mayonnaise. Mound this mixture on top of the artichoke bottoms. Sprinkle the salads with some chives.
