  • 4 eggs
  • 1 teaspoon baking powder
  • 1 orange, zest
  • 1 teaspoon orange flower water (or 1 tablespoon lemon juice)
  • 130 g soft unsalted butter + for the tin
  • 130 g sugar
  • 130 g plain flour
  • Recipe preparation steps

    Separate the egg yolks from whites.
  • 2
    Whisk the egg yolks with the sugar until the mixture gets clearer ; incorporate the soft butter, the flour, then the baking powder.

    Add a pinch salt to the egg whites and beat them with an electric mixer until they get frothy and thick ; incorporate them very gently to the mixture.

    Add , the orange flower water, then orange zests ; display this preparation in the madeleine tins.

    Bake in oven for 5 minutes at 300°F then for 15 minutes at 400°F.

    The madeleines will get golden brown ; take them out from their tins and let them warm down.
