  • 6 thin slices stale baguette
  • 1 clove garlic
  • 1 tablespoon butter
  • 1 splash white wine vinegar
  • 2 eggs
  • fine salt and freshly ground black pepper
  • 80 g smoked bacon
  • 200 g mâche (lamb's lettuce)
  • olive oil
  • red wine vinegar

    Rub the baguette pieces with the garlic and fry in butter over medium heat until brown on both sides. Set the croutons aside.

    In the meantime, fry the bacon until it just starts to brown. Deglaze the pan with a little vinegar and set aside.
