  • 3 lemons
  • 3 eggs separated
  • 2 tablespoons of water
  • 4 to 5 tablespoons of double whipped cream
  • 120 g castor sugar
  • 10 g gelatine
  • Recipe preparation steps

    Beat the sugar and egg yolk together until light and fluffy.

    Add the grated rind of 2 lemons.

    Squeeze all the lemons and strain the juice.
  • 4
    Dissolve the gelatine in the water.

    Mix with the lemon juice and quickly strain into the egg mixture.

    Mix well and put to one side in a cold place until the mousse begins to set.

    Stir occasionally so it sets evenly.

    When the mixture is set sufficiently to hold a light trail, whisk the egg whites stiffly and fold them in lightly.

    So they are completely incorporated in the mousse.

    Pour into a serving dish and allow to set, decorate with whipped cream
