Melt the
butter in a saucepan over medium heat. Choose a saucepan just barely large enough for the piece of
meat.
Brown the
meat thoroughly on all sides. Add the water and bring to a boil.
Season with
salt and
pepper. Add the
garlic,
onion,
carrot, and
thyme. Cover, reduce heat, and
cook the
lamb at a simmer until tender, about 2 to 3 hours. The
lamb is done when a fork slides easily into it, but before the
meat starts to
fall apart.
