  • 2 tablespoons butter
  • coarse, gray salt and freshly ground black pepper
  • 8 cloves garlic
  • 1 medium yellow onion
  • 1 medium carrot
  • 2 sprigs fresh thyme
  • 500 g boneless lamb shoulder
  • 80 ml warm water

    Melt the butter in a saucepan over medium heat. Choose a saucepan just barely large enough for the piece of meat. Brown the meat thoroughly on all sides. Add the water and bring to a boil. Season with salt and pepper. Add the garlic, onion, carrot, and thyme. Cover, reduce heat, and cook the lamb at a simmer until tender, about 2 to 3 hours. The lamb is done when a fork slides easily into it, but before the meat starts to fall apart.

    When the lamb is done, remove it from the saucepan. Set aside and keep warm. Remove the thyme sprig stem from the saucepan and discard.

    Thoroughly puree the vegetables with the liquid in the saucepan using a stick blender. Add more salt and pepper if required. Simmer the sauce for a few minutes to allow it to thicken more.

    Slice the lamb and arrange it on individual serving plates. Spoon the sauce over the meat.
