  • fine salt and freshly ground black pepper
  • grapeseed oil, or other neutral oil
  • 600 g lamb rack consisting of 8 ribs

    Preheat the oven to 220°C.

    Season the lamb with salt and pepper. Set aside.

    Heat the oil in a wide frying pan over high heat. Brown the lamb on all sides.

    Transfer the lamb to a roasting pan or leave it in the frying pan and place it in the oven. Bake for about 20 minutes or until the interior temperature reaches 50°C.

    Remove the lamb from the oven and set aside, covered, for 5 minutes or so to rest.

    Slice the rack into individual chops for serving.
