Recipe's Ingredients

  • 1 sprig of rosemary
  • 1 sprig of thyme
  • 1 bay leaf
  • 2 lumps of sugar
  • salt and pepper
  • 3 tablespoons olive oil
  • 350 g onions, chopped
  • 30 g ripe tomatoes, chopped
  • Recipe preparation steps

    Heat the oil in a pan, add onions and tomatoes, cook over a medium heat.

    Tie herbs together with thin string, put them in the pan and tie the other end to the pan handle.

    Season with salt, pepper and sugar. When boiling point is reached, reduce the heat and cover, then simmer for 1 hr.

    Uncover and simmer until a thick puree is achieved.

    Remove the herbs and sieve puree. Allow to cool and store in closed jars in the fridge.
