  • 2 tablespoons butter
  • 1 medium onion
  • 1 teaspoon flour
  • pinch fine salt
  • pinch freshly ground white pepper
  • pinch ground nutmeg
  • 3 eggs
  • 1 teaspoon minced chives
  • 180 ml milk
  • Recipe preparation steps

    Melt 1 tablespoon butter in a saucepan over medium heat. Add onions, lower heat, and sauté for 15 minutes until soft. Do not brown the onions.

    Add flour and mix thoroughly. Add salt, pepper, and nutmeg and mix. Add milk and mix until flour is dissolved. Bring to a boil and then lower heat to simmer. Cover and simmer for 20 minutes.

    In the meantime, cover eggs with water in a saucepan and bring to a boil. Cook the eggs over a low boil for 10 minutes.

    Add remaining tablespoon of butter to the sauce and stir until combined. Using a slotted spoon, divide the onions among warm serving plates. Peel the warm eggs, slice into 1/4 inch thick slices, and arrange on the onions. Divide the remaining sauce over the eggs.

    Garnish with minced chives [optional].
