  • 1 fennel bulb, trimmed and shaved crosswise into paper thin slices
  • pinch freshly ground white pepper
  • 1 easpoons salt
  • 2 tablespoons olive oil
  • ¼ teaspoons cayenne pepper
  • 1 tablespoon minced parsley
  • 300 g halibut fillets
  • 130 ml tomato and red pepper coulis

    Toss fennel slices with salt and set aside for 30 minutes.

    Rinse fennel in multiple water changes and drain well.

    Heat olive oil in a sauté pan over high heat. Sauté halibut filets until barely cooked. Remove from heat, tent with foil, and set aside.

    In the same sauté pan, add fennel slices, coulis, and both peppers. Cook until the fennel is tender.

    Divide the sauce among serving plates. Place a fillet centered on the sauce. Sprinkle with parsley and serve.
