Season the fillets with salt and pepper and place skin side down in the hot butter. Fry for a minute and then place the frying pan in the oven for 5 to 6 minutes.

When the internal temperature of the salmon reaches 110ºF, remove the frying pan from the oven, transfer the salmon fillets to a plate, and tent with foil for 5 minutes.
