  • leaves from 3 sprigs fresh parsley
  • 1 tablespoon butter
  • 300 g cauliflower florets
  • 50 g finely grated parmesan cheese

    Steam the cauliflower until tender, about 8 minutes.

    Preheat a broiler.

    When the cauliflower is just cool enough to handle, hold each floret by its stalk and dredge the head through the cheese. Place each floret, as it's coated with cheese, in an au gratin dish, one dish for each serving. Drizzle the coated florets with melted butter and season with salt and pepper.

    Reheat the cauliflower under the broiler until the tops start to brown, about 3 minutes.

    Sprinkle with parsley and serve.
