This simple soup is nothing more than asparagus juice that’s gently heated, seasoned with a little salt, and finished with a little butter. The garnish is asparagus tips and chives, but many other garnishes will work just as well. What really separates this soup from other asparagus soups is that it is made from juice, not from pureed asparagus.
 

Recipe's Ingredients

  • 2 to 3 tablespoons chilled butter, diced
  • 1 teaspoon minced chives
  • fine salt

  • 450 g medium to thick green asparagus stalks

    Reserve 4 to 6 of the best asparagus tips. If very thick, cut in half or thirds lengthwise. Set aside.

    Preheat the serving bowls.

    Heat a little oil in a frying pan. Add the reserved asparagus tips and a little water. Salt. Fry until cooked through. Drain and set aside.

    In the meantime, juice the asparagus stalks. There should be about 1 cup of juice. Heat the juice in a small saucepan over high heat, stirring often. Season with salt. When close to boiling, remove from heat and add chilled butter. Whisk to combine. When almost combined, froth with a hand blender. Check again for salt.

    Divide the cooked asparagus tips among the serving bowls. Laddle the soup over the tips. Sprinkle with chives and serve immediately.
