  • ½ medium red bell pepper, cored, seeded, pith removed, chopped
  • ½ medium green bell pepper, cored, seeded, pith removed, chopped
  • ½ medium cucumber, peeled, seeded, chopped
  • 1 medium onion, peeled, chopped
  • 1 narrow branch celery, peeled, chopped
  • 1 clove garlic, peeled 1 tablespoon lemon juice
  • 2 dried tomatoes
  • 8 medium leaves fresh basil
  • 1 teaspoon sherry vinegar
  • 3 tablespoons olive oil
  • fine salt and freshly ground black pepper, to taste
  • 500 g ripe tomatoes, cored, quartered, seeds removed

    Place all the ingredients, except the salt and pepper, in the bowl of a food processor.
