  • 350 g eggplant slices

    Sprinkle the eggplant slices liberally with salt on both sides and set aside for 30 minutes.

    Rinse the eggplant slices in cold water and pat dry with absorbent paper.

    Preheat the oven to 170°F.

    Heat enough olive oil in a large frying pan over medium heat to fill the pan to a depth of about 1/10 in. When the oil is hot, dust the slices thoroughly with flour. Shake off any excess. Dip the slices in the beaten egg and shake off any excess. Fry the slices in a single layer until lightly brown on each side. Drain the slices on absorbent paper in the oven.
