  • 1 lettuce finely shredded
  • 6 onions finely chopped
  • 2 teaspoons of sugar
  • 1 bouquet garni
  • salt and pepper
  • 2 carrots peeled and finely diced
  • 1 kg of peas or 3000 peas in pod
  • Recipe preparation steps

    Melt the butter in a heavy pan and add the shelled peas. Cook gently with the lettuce, onions, sugar and bouquet garni. Season with salt and pepper and cook for 5 mins.

    Increase the heat and add 1inch of water. Bring to the boil and add the carrots. Put the lid on and reduce the heat to very low.

    Cook for 15 to 20 mins or until the peas are cooked through.

    Remove the bouquet garni and serve
