  • 5 large, thin slices prosciutto
  • about 6 slices prosciutto
  • freshly ground black pepper
  • fine salt
  • 1 tablespoon finely minced chives
  • 300 g fresh goat cheese, at room temperature
  • 50 g chopped pistachios
  • 130 g salad greens
  • 100 ml heavy cream

    Carefully butter 4 small, domed molds and place in a freezer.

    Dice 2 of the prosciutto slices.

    Break the cheese up with a fork. Mix in the cream. Add 40 grams of pistachios and three-fourths of the diced prosciutto. Season with pepper. Mix until smooth. Remove the molds from the freezer and divide the cheese mixture between them. Firmly tamp the mixture into the molds. Refrigerate for an hour.

    Cut each of the remaining prosciutto slices lengthwise into 4 strips.

    Mix the salad greens with the oil, vinegar, and salt. Divide between individual serving plates.

    Unmold the cheese by placing the molds in hot water for a few seconds. Place one on the center of each plate. Sprinkle the remaining diced prosciutto and pistachios over the cheese. Attractively arrange 3 prosciutto strips on each plate. Sprinkle the plates with chives.
