  • 1 teaspoon dijon-style mustard
  • ½ white onion, peeled, grated
  • 1 clove garlic, peeled, grated
  • ½ teaspoons freshly ground white pepper
  • fine salt, to taste
  • 2 tablespoons very finely minced parsley
  • 2 tablespoons very finely minced chives
  • 300 g fromage blanc, well drained
  • 130 ml heavy cream, beaten until thickened, but not firm

    Combine the onion, garlic, cheese, mustard, cream, pepper, and salt in a bowl. Whisk until smooth. Place the mixture in a strainer lined with fine cheesecloth and drain in the refrigerator for 12 to 24 hours.

    Before serving, shape the cheese into "quenelles" (dumplings) with two large spoons. Roll the quenelles in the herbs. Gently press the herbs into place.
