  • 1 onion sliced
  • 3 rashers of lean streaky bacon
  • 1 clove of garlic
  • 1 bouquet garni
  • salt and pepper
  • 1 teaspoon sugar
  • 500 g fresh tomatoes
  • Recipe preparation steps

    Chop the tomatoes roughly in a pan with the onion. Add the bacon cut into strips with the crushed garlic, sugar, bouquet garni and seasoning.

    Cook over a low heat for about 20 mins or until the tomatoes are both soft and well flavoured.

    Sieve or put through a vegetable mill. Taste and season.
