  • 1 clove of garlic
  • 1 onion
  • 2 tablespoons gherkins
  • 1 tablespoon parsley
  • 2 tablespoons chives
  • 1 tablespoon leaves
  • 1 tablespoon of capers
  • salt and pepper
  • 2 hard boiled eggs
  • 3 tablespoons vinegar
  • 4 tablespoons walnut oil
  • 8 tablespoons peanut oil
  • 1 kg of potatoes

    Steam the potatoes, peel and cut into thick slices and keep warm.

    Rub the inside of a warm salad bowl with the garlic clove. Place the potatoes, onion, gherkins, capers and the herbs in the bowl and season with salt and pepper.

    Work the chopped egg yolks to a puree add the vinegar, salt and pepper to taste and mix well. Then add the oils and pour over the salad and lastly add the chopped egg whites.
