Recipe's Ingredients

  • cornflour
  • 4 eggs
  • pinch of salt
  • 2 drops lemon essence
  • 2 drops vanilla essence
  • 100 g castor sugar
  • 100 g flour
  • 100 g melted butter
  • 25 g icing sugar
  • Recipe preparation steps

    Grease 24 scallop shaped madeleine moulds and dust with cornflour.

    Whisk the yolks with the sugar until creamy and pale.
  • 3
    Then gradually whisk in the flour, whisk the egg whites and salt until stiff.

    Then whisk the cooled butter into the cake mixture.
  • 5
    Fold in the egg whites with the essences.
  • 6
    Fill the moulds with the mixture and bake in a preheated oven.

    At 190°C gas 5 for 20 mins.

    Cool on a wire rack dust with icing sugar and serve
  • Ready !
