  • 2 tablespoons of olive oil
  • salt and pepper
  • 450 g of waxy potatoes
  • 1.5 kg of large onions
  • 700 g of pork sausage meat
  • Recipe preparation steps

    Peel and thickly slice the potatoes and leave in a bowl of cold water.

    Then peel and slice the onions. In a large pan heat the oil over a gentle heat and cook the onions for 10 mins. Stirring frequently until coloured. Dry the potatoes and mix them into the onions. Season with salt cover and leave to simmer until the vegetables render their juice.

    Roll the sausage meat out and slice into small strips bury them in the vegetables and season with pepper.

    Cover and continue cooking gently mixing from time to time. When the potatoes are tender remove the lid and place under a hot grill to make brown and crusted serve immediately
