  • 3 eggs separated
  • icing sugar for dusting
  • 1 tablespoon kirsch
  • 3 tablespoons single cream
  • grated rind of 1 lemon
  • 25 g raisins
  • 250 g pate brisee short crust pastry
  • 200 g fromage blanc
  • 130 g sugar
  • 15 g arrowroot
  • Recipe preparation steps

    Place the raisins in a bowl with the kirsch and leave to soak.
  • 2
    Line a loose bottom flan dish with greased paper [9ins or 23cm].

    Line with the pastry and prick the base with a fork.
  • 4
    Place the fromage blanc in a bowl.
  • 5
    Add the egg yolks, cream, sugar, arrowroot and the lemon rind.

    Beat the egg whites until stiff and gently fold them into the mixture.

    Pour the cream cheese filling into the pastry case.

    Sprinkle the surface with the raisins.

    Place in a preheated oven 180°C.

    After 10 mins lower the oven temperature to 150°C.

    Bake for a further 40 mins then remove from the tin and cool.

    Dust with the icing sugar and serve
