  • 8 potatoes, medium
  • 1 teaspoon parsley, chopped
  • salt, pepper
  • 50 g butter
  • 250 ml chicken stock
  • Recipe preparation steps

    Peel potatoes. Place the potatoes in a baking dish just large enough to hold them in a single layer. Pour over enough stock to half cover and brush tops with melted butter. Season.

    Place in a hot oven 200°C for 35 minutes or until nearly all the stock is absorbed and potatoes are tender and golden on top.

    Dress into a serving dish and sprinkle with chopped parsley.

    Traditionally, potatoes are shaped with a knife to resemble barrels prior to cooking.
