Heat 1 tablespoon
oil in a wide frying pan over medium heat.
Cook the
onion and
pepper until they start to soften, about 5 minutes. Add the
zucchini slices.
Season with
salt,
pepper, and
curry powder. Mix well. Continue to
cook, stirring often, until the
zucchini is tender. Lower heat if necessary to prevent the mixture from browning too much.
