  • 2 tablespoons oil
  • 1 medium onion
  • ½ medium red bell pepper
  • 1 medium zucchini
  • fine salt and freshly ground black pepper
  • 1 teaspoon curry powder
  • 1 teaspoon finely minced chives
  • 300 g flat lemon sole (or tilapia) fillets

    Heat 1 tablespoon oil in a wide frying pan over medium heat. Cook the onion and pepper until they start to soften, about 5 minutes. Add the zucchini slices. Season with salt, pepper, and curry powder. Mix well. Continue to cook, stirring often, until the zucchini is tender. Lower heat if necessary to prevent the mixture from browning too much.

    While the zucchini mixture is cooking, heat the remaining oil in another frying pan over medium-high heat. Season the fillets with salt and pepper and cook, browning both sides.
