  • 8 crêpes (6" diameter)
  • 3 tablespoons honey
  • 2 tablespoons grand marnier
  • 120 g butter
  • 100 ml orange juice

    Preheat oven to 77°C. Preheat serving plates.

    Trim the ends from the oranges and peel by cutting skin from end-to-end. Using a sharp knife, separate the orange wedges from the membranes. Melt 20 grams butter in a sauté pan. Add the orange wedges and the honey. Cook over medium heat for about 5 to 6 minutes. Remove from heat and keep warm.

    Bring the orange juice to a boil in a small saucepan. Remove from heat and whisk in the remaining 100 grams of butter. Strain and set aside.

    For each of the crêpes, place a portion of the cooked oranges on a crêpe and fold into quarters. Divide hot orange juice on the hot serving plates. Place two filled crêpes on each serving plate. Heat the Grand Marnier in a small sauté pan, flame, and pour over the crêpes.
