  • 1 tablespoon olive oil
  • 4 tomatoes peeled and quartered
  • 1 pch fennel seed
  • 1 pch thyme
  • 1 sm bay leaf
  • ½ garlic clove crushed
  • 4 peppercorns
  • ½ teaspoons salt
  • ¼ teaspoons saffron
  • 1 lemon
  • 700 g fish steaks
  • 250 ml dry white wine

    Oil a large skillet.

    Place fish in skillet.

    Add tomatoes, fennel, thyme, bay leaf, garlic, peppercorns, salt, and saffron.

    Add wine.

    Bring to boil.

    Cover and simmer for 10 minutes, or until fish is well cooked but still firm.

    Cool fish in cooking liquid.

    Serve fish cold with 4 to 6 tablespoons of cooking liquid.
