You can thicken this sauce slighty with cornflour if desired.Return steaks to pan for 1 minute to heat through, season, and finish with chopped parsley.* Serve with Potato Casserole and fresh green salad.

  • 4 slc bacon
  • 1 teaspoon mustard, whole grain
  • 1 onion, medium
  • 1 teaspoon parsley, chopped
  • salt

  • 1 kg beef, fillet
  • 60 g butter
  • 130 ml beef stock
  • 130 ml brandy
  • 130 ml cream
  • Recipe preparation steps

    Cut filet into equal portions.Press steaks into a neat round shape and wrap with a slice of bacon.

    Secure with a toothpick.

    Heat half the butter in a pan and cook steaks to required degree of doneness.

    Remove from pan and keep warm.To make the sauce: Dice onions.

    Add remaining butter and onions and gently cook for 1 minute, then add brandy and flame.

    Reduce by half, add beef stock, cream and mustard and reduce until a sauce consistency is obtained.
