  • 4 eggs beaten
  • salt and pepper
  • butter for greasing
  • 1 tablespoon pernod
  • 1 kg fennel bulb cut into quarters
  • 1 l milk
  • 200 ml double cream
  • Recipe preparation steps

    Cook the fennel in the milk for about 30 mins. Then drain well and blend until smooth. Whisk in the eggs, pernod, cream , salt and pepper.

    Butter 6 ramekins dish and fill with the mixture three-fourths full. Place in an oven proof dish half full with water.

    Cook in a warm oven for about 30 to 40 mins. To serve turn out the ramekins onto a warm serving dish.
