  • 1 tablespoon olive oil
  • 1 medium onion, julienned
  • 1 clove garlic, thinly sliced
  • 3 eggs, beaten
  • salt and freshly ground pepper
  • 2 thin slices prosciutto, julienned
  • 1 tablespoon minced chives
  • 150 g green bell pepper, julienned
  • 300 g plum tomatoes, peeled, seeded, cored, julienned

    Heat oil in a large nonstick sauté pan over medium-low heat. Add onion, garlic, and pepper and sauté for 15 minutes. Lower heat and add tomatoes. Continue to sauté for another 10 minutes. The peppers and onion should be tender and sweet; the tomatoes should be very soft.

    Add the eggs and stir with a rubber spatula until small curds form. Adjust seasonings. Divide among heated serving plates and arrange prosciutto on top. Garnish with chives.
