  • 1 lrg eggplant
  • 1 teaspoon salt
  • 2 tablespoons chopped parsley
  • 60 g flour
  • 60 g butter
  • Recipe preparation steps

    Peel eggplant and cut into slices 1/2-inch thick.

    Place in a bowl.

    Sprinkle with salt and let stand for 30 minutes.

    Pat dry with paper towel.

    Dredge with flour.In large skillet, heat 2 tablespoons butter.

    Add eggplant and cook over brisk flame for 10 minutes on each side, or until well browned.
