Recipe's Ingredients

  • 3 oranges
  • 1 tablespoon arrowroot or corn flour
  • 1.8 kg duck
  • 60 g butter
  • 250 ml water
  • 130 ml white wine
  • Recipe preparation steps

    Place the duck in a roasting pan and prick the skin in 6- 8 places and rub with butter.

    Place the water and the wine in the base of the tin with a sprinkling of salt and pepper.Add the bay leave and the zest of one orange.

    Roast the duck in a moderately hot oven 190°C gas 5 for 30 mins.Then reduce the heat to 160°C gas 3 for 1¼ - 1½ hours allowing 30 mins cooking time for each lb.

    Put the duck on a serving plate and keep hot strain the cooking liquid into a saucepan and make up to 3/4 pint with water.Add the juice of 2 oranges and the rind of one cut into matchsticks strips.

    Mix a little of the water with the arrowroot or cornflour and add to the sauce.

    Bring to the boil stirring constantly and then simmer for 3 - 4 mins.

    Garnish the duck with slices of orange and pour a little sauce over the duck.

    Serve hot with the rest of the sauce.
