Prick the skin of the breast
all over with a fork.
Season both sides with
salt and
pepper. Melt 1 tablespoon
butter in a frying pan over high heat and fry the
duck breast, skin side down, for a couple of minutes. Flip breast over and
place frying pan with duck in oven. Bake for 12 minutes. Remove the frying pan from the oven, tent with foil, and set aside to rest for 5 minutes.
