Recipe's Ingredients

  • 3 egg yolks
  • 1 egg yolks
  • salt, pepper
  • 1 ablespoons milk
  • ¼ teaspoons nutmeg
  • 500 g potatoes medium
  • 50 g butter
  • Recipe preparation steps

    Peel and boil the potatoes until tender, drain well and mash to a fine dry puree.

    Stir in butter and egg yolks and season with spices.

    Butter a baking tray.

    Fill mixture into a piping bag fitted with a large star nozzle and pipe spiral beehive shapes 5cm high and 3cm wide.

    Place in the oven for a few minutes to set mixture.

    Brush evenly with combined milk and egg yolk and return to oven to colour golden brown.

    Lift from tray with a spatula when done.
