Recipe preparation steps

Peel and boil the potatoes until tender, drain well and mash to a fine dry puree.

Stir in
butter
and
egg
yolks and
season
with spices.

Butter
a baking tray.

Fill mixture into a piping bag fitted with a large star nozzle and pipe spiral beehive shapes 5cm high and 3cm wide.

Place
in the oven for a few minutes to set mixture.

Brush evenly with combined
milk
and
egg
yolk and return to oven to colour golden
brown
.

Lift from tray with a spatula when done.
