A classic dessert sauce made with egg yolks, sugar and milk. Vanilla is often added to give more flavor.

  • 4 egg yolks
  • ½ or 1 tablespoon vanilla extract (optional)
  • 80 g granulated sugar
  • 500 ml milk
  • Recipe preparation steps

    Boil milk - and optionally vanilla.

    Beat egg yolks and sugar until mixture is pale yellow.

    While beating, slowly pour the boiling milk in the mixture.

    In a saucepan, cook over moderate heat, stir all the time, until cream coats the back of the spoon, during 5 to 10 minutes. Do not let the sauce boil.
