  • ½ tablespoons curry powder
  • ¼ teaspoons nutmeg
  • 45 g butter
  • 15 g all-purpose flour
  • 250 ml chicken stock
  • Recipe preparation steps

    Prepare a "sauce velouté": Melt 30 grams of butter in a small saucepan over medium heat. Stir in the flour and cook for a couple of minutes. Do not allow the flour to brown. Gradually mix in the stock and bring to a low boil.

    When the sauce is thick and smooth, stir in the curry powder and nutmeg. Taste for salt. Keep the sauce at a low simmer until needed.

    Just before serving, off the heat, stir in the last 15 grams of butter.
