Recipe's Ingredients

  • 4 egg whites
  • 1 tablespoon of cocoa
  • 250 g of icing sugar
  • coffee essence
  • Recipe preparation steps

    Sift the icing sugar and place in a bowl with the egg whites.

    Place over a pan of boiling water and whisk until very thick.

    Remove from the heat and whisk till cool.
  • 4
    Divide the mixture into three folding in the flavouring as lightly as possible.

    Flavour one portion with the coffee the second with sifted cocoa and leave the third plain.

    Pipe finger lengths of the mixture onto greased, floured baking trays.

    Bake in a slow oven gas 2 150°C for 5 to 6 mins
