  • 10 sprigs fresh coriander (cilantro), leaves only
  • 2 crêpes (10" diameter)
  • 4 slices smoky bacon, sautéed and cut into bite-size pieces
  • fine salt and freshly-ground pepper, to taste
  • 80 g grated gouda

    Preheat oven to 170ºF. Preheat crêpe pan.

    Lightly fry the eggs on one side and place in oven until needed.

    Use about half the batter (about 90 milliliters) to make a crêpe. As the first side is cooking, arrange half the coriander leaves around the edge of the crêpe. Press the leaves lightly to flatten them against the batter.

    When the crêpe is cooked on the first side, flip it over. Place a fried egg in the center of the crêpe, arrange half the bacon around the egg, sprinkle half the cheese over the egg, season with salt and pepper, and fold the edges of the crêpe inward to make a 4-sided packet. Place the crêpe on a heated serving plate and set in the oven while the second crêpe is being made.
