Recipe's Ingredients

  • 3 tablespoons of flour
  • salt and pepper
  • 3 egg yolks
  • slices of french stick, dried in the oven
  • 150 g onions, finely sliced
  • 100 g of butter
  • 250 ml double cream
  • 1.5 l of milk, heated to simmering point
  • Recipe preparation steps

    Put the onions and half of the butter in a large pan. Saute until they are golden but not browned. Stirring constantly sprinkle the flour on the onions and cook for several more mins.

    While stirring pour on the hot milk. Bring to the boil and season with salt and pepper then simmer gently for 15 mins.

    In a bowl beat together the egg yolks, the cream and a ladle full of soup. Take the pan off the heat allow to cool for 15 mins. Then stir in the egg yolk mixture, stirring well add the rest of the butter. Place the dried French bread in a tureen and pour the soup over then serve
  • Ready !
