  • 3 tablespoons extra virgin olive oil
  • 1½ tablespoons white wine vinegar
  • 1½ tablespoons dry white wine
  • fine salt and freshly ground black pepper, to taste
  • 250 g fromage blanc, drained for 2 days
  • 15 g shallots, minced
  • 7 g fresh flat-leaf parsley, minced
  • 7 g fresh chervil, minced
  • 7 g fresh chives, minced
  • 100 ml heavy cream, beaten until barely firm
