  • 3 to 4 egg whites whisked
  • vanilla sugar

  • creme fraiche
  • 500 ml creme fraiche

    Line a 850 ml (1 and half pt) mould or 6 individual coeur à la crème moulds.

    Or a sieve with a muslin or cheese cloth.

    Whip two thirds of the creme fraiche until it forms soft peaks.

    Whisk in the egg whites until stiff.
  • 5
    Spoon into the moulds or sieve and leave in a cool place for 8 to 24 hours.

    Turn out on a cold plate or plates.

    Serve with vanilla sugar, fresh fruit and creme fraiche
