Recipe's Ingredients

  • gray salt and freshly ground white pepper
  • 2 small sprigs flat-leaf parsley
  • 2 tablespoons butter
  • 1½ tablespoons flour
  • 40 g finely diced apple
  • 250 g cauliflower florets
  • 150 ml whole milk
  • 200 ml chicken stock
  • 50 ml heavy cream
  • Recipe preparation steps

    Cook the cauliflower in boiling, salted water for 8 minutes. Drain.

    Melt the butter in a saucepan over medium heat. Add the flour and cook for a few minutes without browning. Whisk in the milk. Continue whisking until the mixture is very smooth.

    Whisk in the stock and cream. Add the cooked cauliflower and puree the soup with a stick blender. Season with salt and pepper. Cook over low heat for about 5 minutes.

    Strain the soup into another container and set aside to cool at room temperature.

    To serve, divide the soup between individual serving bowls. Sprinkle each with the apples and decorate with a parsley sprig.
