Recipe's Ingredients

  • 4 egg yolks
  • 2 egg whites
  • 10 tablespoons sugar
  • 14 tablespoons unsweetened chestnut puree
  • 2 tablespoons dark rum
  • chocolate leaves
  • 60 g sugar
  • 170 ml warmed milk flavoured with vanilla essence
  • 500 ml double cream
  • Recipe preparation steps

    Beat the egg yolks and sugar then add the warmed milk and cook until thickened, stirring gently.

    Transfer to a mixing bowl add the chestnut puree and the rum.

    While the mixture is still luke warm, then chill well.

    Now make the second part whip the egg whites until stiff and fold in the sugar.

    Beat the cream until thick.

    Fold in the egg whites into the chestnut cream.

    Then carefully fold in the whipped cream.

    Pour into a mould and freeze for 4 hours.

    Then unmould and decorate with small rounds of sweetened chestnut puree.
