tablespoons dark rum
chocolate leaves

sugar
170 ml
warmed milk flavoured with vanilla essence
500 ml
double cream
Recipe preparation steps
1
Beat the
egg
yolks and
sugar
then add the warmed
milk
and
cook
until thickened, stirring gently.

Transfer to a mixing bowl add the
chestnut
puree and the
rum
.

While the mixture is still luke
warm
, then chill well.

Now make the second part whip the
egg
whites until stiff and fold in the
sugar
.

Beat the
cream
until thick.

Fold in the
egg
whites into the
chestnut
cream
.

Then carefully fold in the
whipped cream
.

Pour into a mould and freeze for 4 hours.

Then unmould and decorate with small rounds of sweetened
chestnut
puree.

Dusted with
chocolate powder
or chocolate
sauce
and chocolate leaves.
