  • 15 g all-purpose flour
  • 35 g freshly grated gruyere cheese
  • 25 g freshly grated parmesan cheese
  • 250 ml whole milk
  • 50 ml chicken stock

    Prepare a sauce béchamel: Melt 30 grams of butter in a small saucepan over medium heat. Stir in the flour and cook for a couple of minutes. Do not allow the flour to brown. Gradually mix in the milk and bring to a low boil. When the sauce is thick and smooth, stir in the chicken stock. Taste for salt. Simmer for about 10 minutes to reduce slightly.

    Just before serving, off the heat, stir in the two cheeses and the last 15 grams of butter.
