immature celery stalks with leaves from the center of the bunch

tablespoon heavy cream

teaspoons coarse mustard

tablespoons walnut oil

tablespoons lemon juice

celery, strings removed, 5/32" dice
200 g
pears, peeled, cored,5/32" dice
100 g
room-temperature roquefort cheese, crushed with fork
Recipe preparation steps

Place
the
celery
and pears in a mixing bowl. Add the
cheese
and gently combine with a spoon. Mix in the walnut pieces.

Whisk the
cream
,
mustard
, oil,
lemon juice
,
salt
, and
pepper
together. Combine with the
celery
mixture.

Divide the mixture between serving plates, ramekins, or glasses and decorate each with an immature
celery
stalk.
