  • 8 shelled walnut halves, 5/32" dice
  • fine salt and freshly ground black pepper
  • 4 immature celery stalks with leaves from the center of the bunch
  • 1 tablespoon heavy cream
  • ½ teaspoons coarse mustard
  • ½ tablespoons walnut oil
  • ½ tablespoons lemon juice
  • 200 g celery, strings removed, 5/32" dice
  • 200 g pears, peeled, cored,5/32" dice
  • 100 g room-temperature roquefort cheese, crushed with fork
  • Recipe preparation steps

    Place the celery and pears in a mixing bowl. Add the cheese and gently combine with a spoon. Mix in the walnut pieces.

    Whisk the cream, mustard, oil, lemon juice, salt, and pepper together. Combine with the celery mixture.

    Divide the mixture between serving plates, ramekins, or glasses and decorate each with an immature celery stalk.
