  • 2 tablespoons butter
  • 1 clove
  • ½ tablespoons white wine vinegar
  • ½ tablespoons heavy cream
  • 4 tablespoons chilled butter, diced
  • fine salt and freshly ground white pepper
  • freshly ground nutmeg
  • 1 teaspoon finely grated lemon zest
  • 250 g cauliflower, cut into individual florets

    Place the butter and clove in a saucepan of salted water and bring to a boil. Add the cauliflower and cook until tender, about 3 minutes. Drain.

    In the meantime, heat the vinegar and cream in a small saucepan over very low heat. Whisk in the butter, a little at a time. Season with salt, pepper, nutmeg, and lemon zest.

    Divide the cauliflower between individual serving dishes and spoon the sauce over the top.
