  • 1 tablespoon soft butter
  • 2 large eggs
  • 1 teaspoon flour
  • 2 large egg yolks
  • fine salt and freshly ground black pepper
  • grated nutmeg
  • 400 g cauliflower, separated into florets
  • 80 g smoked bacon, cut into 1.5" square strips
  • 150 ml heavy cream

    Preheat oven to 410ºF . Prepare 4 small (110 grams) ramekins by brushing their interiors with the soft butter.

    Blanch the cauliflower in salted water for 8 minutes. Drain well.

    Place the eggs, egg yolks, and cream together, along with the cauliflower, flour, salt, pepper, and nutmeg in the jar of a blender. Blend at high speed. Divide the mixture between the ramekins.

    Bake the ramekins until a knife inserted in the center comes out dry, about 30 minutes.

    Let the ramekins rest for a couple of minutes before unmolding.

    Before serving, cook the bacon in a frying pan until hot, but not crisp. Drain briefly.

    Unmold the custards onto individual serving plates. Divide the bacon over the custards.
