cauliflower, divided into florets

fresh tomato puree
25 g
butter
30 g
grated gruyère cheese
Recipe preparation steps

Bring a saucepan of salted water to a boil. Add the
cauliflower
and
cook
until very tender, about 10 minutes. Drain and puree through a food mill.

Cook the
tomato puree
in 1 tablespoon
butter
over low heat until it becomes a bit dry, about 3 to 4 minutes.

Place the
cauliflower
puree in a saucepan along with the remainder of the
butter
, 0.8 oz of grated
cheese
,
salt
, and
pepper
. Heat gently, Mix in the
tomato puree
.

Divide the puree between serving plates. Sprinkle the remaining
cheese
over the individual servings.
