  • 250 g cauliflower, divided into florets
  • 60 g fresh tomato puree
  • 25 g butter
  • 30 g grated gruyère cheese
  • Recipe preparation steps

    Bring a saucepan of salted water to a boil. Add the cauliflower and cook until very tender, about 10 minutes. Drain and puree through a food mill.

    Cook the tomato puree in 1 tablespoon butter over low heat until it becomes a bit dry, about 3 to 4 minutes.

    Place the cauliflower puree in a saucepan along with the remainder of the butter, 0.8 oz of grated cheese, salt, and pepper. Heat gently, Mix in the tomato puree.

    Divide the puree between serving plates. Sprinkle the remaining cheese over the individual servings.
