  • 2 tablespoons butter
  • salt and freshly ground white pepper
  • chopped parsley (optional)
  • 300 g peeled, thinly sliced carrots
  • 80 g peeled, thinly sliced onion
  • 80 g heavy cream
  • 300 ml water
  • Recipe preparation steps

    Melt the butter over medium heat in a saucepan. Add the carrot and onion slices. Fry until the carrots start to soften, about 5 to 10 minutes.

    Add the water, season with salt and pepper, bring to a boil, reduce heat, and simmer until the carrots are very tender, about 20 minutes.

    Transfer the soup to a blender and puree until very smooth. Strain the puree into a clean saucepan and add the cream.

    Reheat the soup just before serving. Garnish with chopped parsley.
