200 ml

Recipe preparation steps

Drain olives and cut each lengthwise into 8 wedges.

Place
olives in a small saucepan with the
sugar
and water. Bring to a boil and reduce heat to simmer. Partially cover and simmer
for 2
to 3 hours.

Raise heat to high and boil the olives until the
syrup
reaches 108°C.

Drain the olives and spread on a parchment-covered baking sheet. Place in a refrigerator to cool.

Store in a sealed container in a cool place.
