This sauce is a mainstay of classic French cooking. There are countless variations, including some prepared with white wine, but to be a true “bordelaise,” it must be prepared with a wine from the Bordeaux region of France. Some recipes use butter or cream at the end of the preparation to counteract the acidity of the wine. This sauce goes best with red meats and organ meats, which are rich enough to stand up to its strength.

  • 2 tablespoons butter
  • 2 shallots, minced
  • 250 ml red bordeaux wine
  • 150 ml veal stock
  • Recipe preparation steps

    Melt 1 tablespoon butter in a saucepan and cook shallots for a minute until soft. Add wine, increase heat to high, and reduce to a syrup.
